Bob’s Delicious Corn Chowder is pretty awesome, winter, spring, summer or fall. It’s creamy, very filling, and good to the last kernel !!!!!!! Enjoy
Ingredients: Serves 6 – 8
- 1/2 lb. of cooked bacon
- 1 can (14.5 oz.) whole corn
- 1 can (14.5 oz.) creamed corn
- 1 can evaporated milk (not condensed)
- 1/2 tsp parsley
- 1/2 tsp pepper
- 1/2 onion
- 2 tbs. butter
- 3 good sized white, all purpose potatoes
Saute 1/2 onion with 2 tbs butter, out into a 3 quart pot..
Peel and dice potatoes
Fill a the 3 quart pot, about 1/2 full with cold water, to keep them from becoming brown.
Add potatoes to the pot.
Cook for 10 to 15 minutes until potatoes are on the soft side.
Add whole corn, creamed corn, evaporated milk, and previously cooked bacon to the 3 quart pot with sautéed butter and onions
Add parsley and pepper to taste, and cook for about another 10 minutes, until potatoes are softened.
