Butternut Squash Soup

 

This Butternut Squash Soup is skimpy on the calories since there’s no heavy cream , except for the drizzle if you choose to add it.  But what it lacks in calories it makes up for in it’s thick, delicious taste.  So no need to feel guilty about that second helping,  you’ll still  have unused calories left over for dessert, so indulge.

Ingredients:

  • 3lb butternut squash
  • 3 tbsp butter
  • ½ a yellow onion, chopped (about ¾ cup)
  • ⅛ tsp ground cinnamon
  • pinch of salt
  • 1 tbsp brown sugar
  • 3 cups chicken stock
  • 1 cup milk
  • drizzle of heavy cream, optional, for garnish
  • toasted pumpkin seeds, optional, for garnish
