Pizzelle (Italian Waffle Cookies)

 

Pizzelle, the Italian Waffle Cookies , these light and crispy holiday treats were a staple at my mother-in-laws Italian Christmas table.

They’re probably one of the easiest treats you can make, and are great served with ice cream and a drizzle of hot fudge. They just might turn out to be another wonderful holiday tradition to be passed down to future generations.

They do require a Pizzelle iron to make them, which you can find in stores or on line.

Ingredients                     Yields:  20 – 24 cookies

3 large eggs
3/4 cup granulated sugar
2 teaspoons vanilla
1/2 cup (1 stick) butter
1 3/4 cups all purpose flour
2 teaspoons baking powder
