Healthy Strawberry Oat Squares

The children will likely approve of these little treats, just the right amount of sweetness without provoking the unwanted sugar high (as if they need any more stimulation).  Surprise them this weekend and you’ll have them wrapped around your finger for the rest of the day (okay, maybe just an hour or two) .

flame-50-pc-newWhole Oats -vs- Quick Oats…does it really matter?  It depends on the recipe, but in this case it does. Since quick oats are pressed thinner than the old fashioned whole oats (rolled oats) their fine texture will hold the ingredients together better.  So your end results will be affected by the type of  oats you use.




Healthy Strawberry Oat Squares
Healthy Strawberry Oat Squares via Sallys Baking Addiction
  • 2 Tablespoons cornstarch
  • 2 Tablespoons warm water
  • 2 cups finely diced strawberries
  • 1/4 cup maple syrup
  • 1 Tablespoon granulated sugar

Oatmeal Base + Topping

  • 2 and 1/4 cup quick oats 
  • 1 teaspoon ground cinnamon
  • 1 cup unsalted almond butter(or peanut butter or sunflower seed butter)
  • 1/4 cup maple syrup
  • 1/4 cup apple butter*
  • 1 large egg, beaten
  • 1/2 cup sliced almonds
