Classis Mint Chocolate Brownies, they’re the original comfort food, the more moist and fudgier the better. On those days when the world seems to be caving in on me, I’ll bake a batch of brownies. And my family knows by now, when they see these fudgy beauties on the counter, it means
“Don’t even try to push that button today buddy, mama’s not in a good place now.”
But, I usually cave in and share…the guilt gets to me after awhile.
Ingredients: Brownies 1 cup unsalted butter 8 ounces semi-sweet chocolate, coarsely chopped 1 and 1/2 cups granulated sugar 1/2 cup packed light brown sugar 4 large eggs 2 teaspoons vanilla extract 1/2 teaspoon salt 1/2 cup + 3 Tablespoons all-purpose flour 1/4 cup natural unsweetened cocoa powder Mint Frosting Layer 1/2 cup unsalted butter, softened to room temperature 2 cups confectioners’ sugar 2 Tablespoons milk 1 and 1/4 teaspoons peppermint extract 1 drop liquid or gel green food coloring (optional) Chocolate Layer 1/2 cup unsalted butter 1 heaping cup semi-sweet chocolate chips
