Summer Corn Chowder

 

Even though this recipe is called summer corn chowder, you really can make it all year.  Actually the only reason for the “summer”, is because fresh corn is so much tastier.  The sweeter the corn, the better it tastes.  Enjoy !!

 

Summer Corn Chowder
Summer Corn Chowder via Cooking Classy

Ingredients:                        Yields:  6 servings

  • 8 ears fresh sweet yellow corn, husked and silks removed and kernels cut from cob
  • 3 Tbsp butter
  • 5 slices bacon, cut into 1/4 to 1/2-inch pieces
  • 1 medium yellow onion chopped (1 1/2 cups)
  • 1/4 cup all-purpose flour
  • 1 clove garlic, minced
  • 5 cups water
  • 1 lb Yukon Gold potatoes, cut into 1/2-inch pieces
  • 1/2 tsp dried thyme
  • 1 bay leaf
  • Salt and freshly ground black pepper
  • 1 Tbsp honey
  • 2 – 3 Tbsp chopped fresh chives
  • Shredded cheddar cheese, for serving (optional)
