MY FAVORITE CORNBREAD

Corn bread is a great snack and a good alternative to dinner rolls.  The brown sugar and honey add a nice sweet kick and moisture to these all time favorites.

 

MY FAVORITE CORNBREAD
My Favorite Cornbread via Sally’s Baking Addiction

Ingredients:
1 cup  cornmeal
1 cup all-purpose flour (measured correctly)
1 teaspoon baking powder
1/2 teaspoon baking soda
1/8 teaspoon salt
1/2 cup  unsalted butter, melted and slightly cooled
1/3 cup  packed light brown sugar
2 Tablespoons  honey
1 large Eggland’s Best egg, at room temperature
1 cup  buttermilk, at room temperature
optional add-ins: 1-2 chopped jalapeño peppers, 1 cup blueberries, 1 cup total dried cranberries and walnuts, 1 cup shredded cheddar cheese, or 1/2 cup bacon crumbles
