Italian Garden Frittata


The Italian Garden Frittata is a wonderful breakfast or brunch recipe that’s sure to be a hit,  and might also be the first empty dish on your table.  Sometimes I’ll add some sliced potatoes and mushroom, to compliment the other ingredients in this Italian Garden Frittata.  Enjoy !!

  •  4  large eggs                                        
  • 6 large egg whites
  • 1/2 cup grated Romano cheese, divided
  • 1 tablespoon minced fresh sage
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 teaspoon olive oil
  • 1 small zucchini, sliced
  • 2 green onions, chopped
  • 2 plum tomatoes, thinly slice
