Buffalo Chicken Lasagna For Two

Buffalo Chicken Lasagna for Two, finally, a recipe for lasagna that won’t feed an army.  And a delicious flavor packed twist for two all time favorites. This recipe fits great in a 5×8 loaf pan and is just enough for two.

The sauce of this Buffalo Chicken Lasagna is a little like an Alfredo, but with a bit more kick to it.
And if you’ve got a hectic schedule, not a problem,  just make ahead and when you’re ready,  pop it in the oven .  Enjoy !!

Ingredients

3-6 traditional lasagna noodles* (see Note about noodle size)
2 tablespoons unsalted butter
1/2 cup chopped onion
1/2 cup chopped green pepper (roughly half of a medium bell pepper)
1/2 cup chopped carrot (roughly 2 large carrots)
1 clove garlic, minced
1 cup shredded cheddar cheese
1/2 cup hot sauce
1/2 cup ranch dressing
2 cups chopped or shredded cooked chicken**
1 tablespoon chopped fresh parsley (plus more for garnish)
1 cup shredded mozzarella cheese

Sauce

1/4 cup (2 ounces or 4 tablespoons) unsalted butter
8 ounces cream cheese, softened and cut into 16 pieces
3/4 cup whole milk
1 teaspoon salt
