Sassy Chicken Bacon Bites


Over the years I’ve tried many variations of this type of recipe, but these Sassy Chicken Bacon Bites have gotten the most raves.  It seems the key reasons these Sassy Chicken Bacon Bites  are so incredible is they’re well seasoned with a mix of herbs and spices, a hint of  heat from the chili powder, sweetness of the brown sugar and wrapped in the saltiness of the bacon…… which make for a great appetizer, so don’t skimp on the seasonings.

 If you’ve got some bacon lovers (and who isn’t), this is probably enough for one or two people.  So you may want to double or triple the recipe.

Sassy Chicken Bacon Bites
  • 1 1/4 pounds boneless, skinless, chicken breasts (about 4 breasts)
  • 3 Tbsp. GREY POUPON Savory Honey Mustard
  • ¾ cup firmly packed dark brown sugar (separated)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoons chili powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon thyme
  • 1/2 teaspoon garlic powder
  • 1 (1-pound) package sliced bacon



Cut chicken breasts into large bite-sized pieces.

  • Mix the mustard and Worcestershire in a medium bowl, gradually add the chicken pieces , toss and coat well.
  • Cover and refrigerate 30 min. to marinate or more (overnight).
  • Remove chicken from marinade; discard marinade.

Preheat oven to 350 degrees F.

Place  cooling rack inside a foil-lined large rimmed baking sheet and lightly coat with cooking spray.

  • Combine 1/2 cup of the brown sugar and the remaining dry ingredients in a medium bowl, mix till well blended….Gradually add a few chicken pieces at a time, making sure each piece is well coated, set aside.
  • In a small bowl, add the remaining 1/4 cup brown sugar
  • Cut the entire package of bacon into thirds…Wrap each chicken piece with a strip of bacon and roll in the brown sugar
  • Place the wrapped chicken pieces on the prepared baking sheet and sprinkle with salt and pepper.

Bake 350 degrees F  …. 20-25 minutes or until the chicken is cooked through.

  • If you want the bacon crispier, broil the wrapped chicken pieces, 4 inches from the heat, 5 minutes on each side or until the bacon is crisp.
