Chicken Piccata


You won’t believe how easy this Chicken Piccata is to prepare.This dish in not too lemon-y and the creamy sauce compliments the chicken wonderfully.    Whenever I order this in a restaurant, it always comes with a choice of a side or two.  My selection has and will always be oven roasted potatoes.     You gotta love capers to include them in this recipe, since I do not, I serve some with and some without.  Enjoy !

Chicken Piccata

  •  3   large skinless, boneless chicken breast halves, pounded flat
  • salt and pepper to taste
  • ½ cup all-purpose flour
  • 2 tablespoons vegetable oil, or as needed
  • 1 clove garlic, minced
  • 1 cup chicken broth
  • ½ lemon, thinly sliced
  • ¼ cup fresh lemon juice
  • 2 tablespoons capers, drained and rinsed
  • 3 tablespoons butter
  • 2 tablespoons minced Italian (flat-leaf) parsley
