Lemon Mousse


Lemon Mousse a dessert that conjures up ideas of dining in a five star restaurant.  So now, you’ve just finished a lovely romantic dinner at your beachfront table, toes wiggling in the sand, moon glistening on the water and now your waiter brings dessert, a gorgeous Lemon Mousse….how decadent is this ?

sunset moonThe truth is …  you’re on the deck, looking out to see hubby in his t-shirt mowing the lawn, kids screaming and fighting over who has the next turn spraying Dad with the hose, and you’ve just done 4 loads of laundry and cleaned the house (maid had the day off ?), and no beachfront table tonight. So now what ?

Since you’ve had to deal with this reality before and already made this decadent Lemon Mousse, just march to the fridge and take one (after all, you’re the boss), add a dollop of whipped cream and head for the hall closet. Why the closet, as any parent knows, nothing gets hung in the closet…so there’s some great real estate with your name on it (I call it my corner office) …. shh, I hear someone coming, enjoy, it’s our little secret.

Lemon Mousse via Champagne Frosting

Yield: about 4-6 servings



1/2 Cup Butter (unsalted), softened
1 Cup Sugar
2 Large Eggs
2 Large Egg Yolks
1/3 Cup Fresh Lemon Juice
1 Tablespoon Lemon Zest, plus a little extra
3/4 Cup Whipping Cream
1/2 Teaspoon Vanilla Extract

Note:  This dessert can be made in advance, just place the mousse in fancy glasses and then top each with a dollop of whipped cream.
