Goat Cheese Spinach & Sun-Dried Tomato Quiche


Goat Cheese Spinach & Sun-Dried Tomato Quiche, baked in a buttery homemade pie crust, makes an excellent addition to any breakfast or brunch. Quiche are great for experimenting, so on Wednesday’s I start thinking how can I use those leftovers, so we usually end up with a quiche, casserole or soup…no point wasting absolutely good food. I have to admit, we’ve come up with some pretty good combos that turned out to be family favorites.



Prep Time: 30 minutes

Total Time: 1 hour, 15 minutes

Yield: one 9-inch quiche

  • 1/2 recipehomemade pie crust(step-by-step photos included)
  • 1/2 teaspoon olive oil
  • 1 teaspoon minced garlic
  • 3 packed cups fresh spinach (see note about using frozen)
  • 4 large eggs
  • 1 cup whole milk
  • 1/2 cup sun-dried tomatoes, drained and chopped
  • 4 ounces goat cheese, crumbled or chopped
  • salt & pepper, to taste
