Hash Brown Breakfast Quiche


Hash Brown Breakfast Quiche a good make ahead dish for breakfast or brunch.  A versatile quiche, just mix it up with any dry ingredients you may already have on hand, like cubed ham, bell peppers, spinach and more. If you do add more of these only use up to two cups worth, so you don’t crown the custard filling.

    • 15 oz. frozen hash browns, shredded
    • 3 tablespoons olive oil, divided
    • Salt and pepper to taste
    • ½ cup bacon bits
    • 1 zucchini, coarsely shredded
    • 8 oz. baby portobello mushrooms, diced
    • 3 eggs
    • 1½ cups milk
    • 1½ cups cheddar cheese
