Grilled Vegetable Salad

 

Grilled Vegetable Salad goes so well with whatever’s on the grill for supper. The different veggies in this salad are perfect, but don’t be afraid to add anything you may have in the fridge to this.  Because some veggies heat up faster like mushrooms, onion and tomatoes, be careful to take them off the grill first so they do not burn.  If you are fortunate enough to have a vegetable garden, this is the perfect grilled salad for you.  Enjoy !!!

Ingredients:

  • 6 red chard leaves
  • 1 portobello mushroom, sliced
  • 1/2 walla walla onion sliced into 1/2 inch rings

  • 1 zucchini, cut lengthwise into 1/4 inch slices
  • 2 firm tomatoes, sliced into 1/2 inch slices
  • 3 garlic cloves, minced
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon fresh cracked black pepper
  • Extra Virgin Olive Oil for drizzling
