Roasted Potatoes, Brussels Sprouts and Sausage



Roasted Potatoes, Brussels Sprouts and Sausage is a very different side dish that everyone really likes. I’ve never gotten one complaint when I serve this side dish. Sometimes I substitute bacon instead of sausage, either way its a very tasty side dish. Enjoy !!

Roasted Potatoes, Brussels Sprouts
Roasted Potatoes, Brussels Sprouts via Barefeet In The Kitchen
  • 3 lbs Yukon gold potatoes, chopped into 3/4″ – 1″ pieces
  • 2-3 tablespoons olive oil
  • 1 lb Brussels sprouts, trimmed and sliced in half
  • 1 lb hot sausage, feel free to substitute 1/2 lb of bacon
  • 8 ounces Monterey Jack cheese, diced into 1/2″ chunks
  • 1/2 cup freshly grated Pecorino Romano or Parmesan cheese
  • 1 tablespoon fresh thyme leaves, or about 1 teaspoon dried thyme
  • 1 1/2 teaspoons kosher salt, adjust to taste
  • 1/2 teaspoon freshly cracked black pepper, adjust to taste butter or oil, for greasing the baking dish
