Pumpkin Cake Roll


A Pumpkin Cake Roll  may seem complicated, but it really is just a few simple steps, and well worth the effort. We decided to give this a try, instead of the usual holiday pumpkin pie. The end results were fantastic,  the proof… it was devoured in minutes, even by my picky husband.


Pumpkin Cake Roll via BHG


 3 eggs
3/4 cup all-purpose flour
2 teaspoons ground cinnamon
1 teaspoon baking powder
1 teaspoon ground ginger 
1/2 teaspoon salt
1/2 teaspoon ground nutmeg
1 cup granulated sugar
2/3 cup canned pumpkin
1 teaspoon lemon juice
1 cup finely chopped walnuts
Powdered sugar
1 8 ounce package cream cheese, softened
1/3 cup butter, softened
1 1/2 teaspoons vanilla
1 1/2 cups powdered sugar.
