Easy Coconut Shrimp, so very easy to make.  This shrimp is so good, you’ll blink your eyes and poof – they’re gone !

Since this is usually the first appetizer to disappear, I usually hide a few for later in the evening…all for me…no sharing this time.

Easy Coconut Shrimp via Sally’s Baking Addiction
  • 1/3 cup all-purpose flour (or whole wheat)
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 large eggs, beaten
  • 3/4 cup Panko bread crumbs
  • 1 cup sweetened shredded coconut
  • 1 pound raw large shrimp, peeled and deveined with tails attached
  • vegetable oil or coconut oil
